3 quick breakfast ideas to get you out of bed

Start the day off right by these healthy, delicious and simple breakfast ideas

How you start your day is an important factor in determining your success for the rest of the day. Creating a routine is often key to helping you get in the right frame of mind, no matter what side of the bed you wake up on.


Does any of this sound familiar? Waking up and snoozing the alarm continually, rushing a cup of tea down and grabbing a slice of toast on the way out, getting stuck in traffic on your way to work, going straight into work, sitting down and being tied to your desk until lunchtime...your constantly rushing, fighting the clock or chaos reigns. You end up having a short temper, being in a bad mood or letting simple things get to you. This is often the result of a lack of routine at the very start of day.

There are many ways to get yourself organised and prepared for a morning routine and we'll go into this in more detail next week. However one thing we can all get better at is making time for breakfast. The fuel to your day is often overlooked as the least important meal but yet you can really reap the benefits.


Breakfast can kick-start your metabolism and many studies have linked it to improved health, better memory and concentration, and lower chances of getting chronic diseases.


The first rule of getting a good breakfast in, is to plan ahead. So here are some ideas to transform your breakfast!


Top breakfast ideas


Three minute breakfast burrito

Prep time: 1 min | cook time: 2 mins (per burrito) | protein 26 grams | calories 447


Ingredients:

2 x eggs

2 tablespoons low-fat milk

1/4 cup black beans

1 whole grain tortilla

2 tablespoons of shredded cheddar cheese

1/5 avocado sliced

2 tablespoons of salsa


Directions:

Add the eggs and milk to the cup and beat them until blended

Microwave on high power for 45 secs and then stir

Add in black beans and stir again

Microwave until eggs and beans are almost set, about a further 30-45 secs longer

When mixture is hot, spoon it onto a tortilla, top with cheese, avo and salsa

Make a burrito


Banana protein pancakes

Prep time: 4 mins | cook time: 4 mins (1 serving of 6-8 pancakes) | protein 14 grams | calories 298


Ingredients:

1 banana

2 eggs

1 teaspoon of olive oil/coconut oil/non-stick cooking spray


Directions:

Peel and cut banana and put into mug/bowl to mash it with a fork until it is fairly smooth

Crack and stir in the eggs and make sure the whole mixture is blended and smooth

Heat a pan and grease it with the oil

Pour the batter in to the pan in small circles the size of two pound coins. After about a minute of cooking, flip them all

Enjoy plain or add a little maple syrup, honey or agave nectar


Blueberry microwave muffin

Prep time: 2 mins | cook time: 2 mins (1 muffin) | Protein 13grams | Calories 390


Ingredients:

1 teaspoon of coconut oil

1 egg

1 1/2 teaspoons of honey

1 teaspoon of vanilla extract

2 tablespoons of ground flaxseed

1 tablespoon of chia seeds

pinch of salt

3/4 cup of blueberries


Directions:

Coat the mug with the coconut oil and break the egg into it. Lightly beat.

Add honey, vanilla extract, salt, flaxseed and chai seeds and stir until blended into a 'batter'

Gently fold in the blueberries then microwave for two minuets. If it hasn't set put it in for 30secs longer, then add blueberries and/or a drizzle of honey. You can even eat it out the mug on the go!
